Vinification and ageing
Let’s take a tour of the cellar. We’re going to start in the vinification area equipped with modern machinery: the crushing machine, the press and the stainless steel vinifying tanks. The wines are aged in two spaces: the old cellar, situated in the oldest part of the winery, underground, which houses large oak barrels. The temperature and humidity of this cellar are naturally conditioned, thanks to its underground position. Then there’s the new ageing room, which houses our barriques (225 litres) and tonneaux (500 litres). This room was created with the old cellar in mind, with a solid brick ceiling and a modern touch.
