Saffron and Peas Risotto recipe

A creamy and enveloping dish where the sweetness of peas meets the distinctive character of saffron, creating a perfect balance of flavors. Ideal when paired with Litina Barbera d'Asti Superiore by Cascina Castlèt, a wine with an elegant structure and notes of ripe red fruits and spices that enhance the dish without overpowering it. Ada Borio's recipe. Ingredients for 4 servings

  • 320 g Carnaroli rice
  • 200 g frozen peas
  • ½ onion
  • ½ glass white wine
  • 1 teaspoon saffron pistils
  • As needed hot vegetable broth
  • As needed extra virgin olive oil
  • As needed butter
  • As needed grated Parmesan cheese

Preparation

  1. Prepare the saffron: Place the saffron pistils in a small bowl with a little warm water and let them infuse for at least two hours to fully release their aroma and color.
  2. Sauté the onion: In a saucepan, heat a drizzle of extra virgin olive oil and add the finely chopped onion. Let it soften gently until translucent.
  3. Cook the peas: Add the peas and sauté for a few minutes, then pour in a ladle of vegetable broth and cook until they become tender.
  4. Toast the rice: Add the rice and toast it for a couple of minutes, stirring continuously.
  5. Deglaze with white wine: Pour in the white wine and let it evaporate completely.
  6. Cook the risotto: Gradually add the hot broth, stirring and allowing the liquid to be absorbed before adding more.
  7. Add the saffron: When the rice is almost cooked, add the saffron infusion and mix well to evenly distribute its color and fragrance.
  8. Finish with butter and Parmesan: Once the risotto has reached a creamy consistency, turn off the heat and stir in a knob of butter and a generous sprinkle of Parmesan cheese.

Pairing with Litina Barbera d'Asti Superiore

Litina Barbera d'Asti Superiore by Cascina Castlèt, with its harmonious structure and bouquet of red fruits and spices, is the perfect match for this delicate risotto. The wine’s lively acidity balances the dish’s creaminess, while its spicy notes enhance the complexity of the saffron. An elegant and refined combination, ideal for a special lunch or dinner.

Enjoy and cheers!
