PASSUM 2023, IT'S THE PERFECT TIME FOR CRUSHING GRAPES

We are crushing the Barbera grapes, that will become our Passum 2023!

 
We picked them by hands, in smaller baskets, at the beginning of october. After the harvest, they rested for almost a month in the grape-drying room to achieve the perfect dryness. Every week, our enologists Giorgio Gozzelino and Roberto Austa check the surmaturation degree until the grapes reach the perfect moment for the crushing process. Now, we let the fermentation process begin. We will be racking in two weeks.
