Bottling

Technology, quality, safety in the workplace. These are the three top priorities of Cascina Castlèt. The bottling room is equipped with a machine that rinses and fills the bottles, then closes them using traditional corks or modern screw caps. The cellar now also has the new GAI: the latest, super-technological bottling machine. The bottles then rest at a controlled temperature for a time which depends on the type of wine, before being labelled.

Temperature control

When we designed and built the winery, we focused particular importance on the way the various rooms were divided and on thermal insulation for the production and storage of wine, and also on saving energy. All the rooms are equipped to control temperature and humidity. To correctly manage the vinification and wine governance, it is necessary to respect an ideal temperature during every phase. In the area where the wine is stored, temperatures range from 15 °C in winter to a maximum of 20 °C in summer. In the ageing cellar, a constant temperature of between 15 and 18 °C is maintained, with a relative humidity of around 80%. The photovoltaic system is capable of covering about 50% of the cellar’s electricity requirements.
